  • When can one firm’s (food) waste become another firm’s treasure?

    This research has examined over 50 business-to-business exchanges of surplus and by-product materials in the agri-food industry. Typical examples are surplus fruits and vegetables at retailers, pulp and peels residues from juice production, permeate from Yogurt production, spent grain and yeast from brewing, used oils from restaurants etc. About half of these potential b2b exchanges have generated (on average) important economic and environmental gains (i.e., 70 ton/yr in material flow, 45 tons/yr CO2 eq. and 12 k$/yr in operating cost). The other half could not be integrated in the operations of the analyzed businesses. Why? This research begins to answer this important question.
